Le Creole is the creation of Wayne Stabiler, a well-known Baton Rouge restauranteur. Wayne started in the food business in the early 1980's while still attending high school. He would drive to the coast to buy seafood straight from the fishermen and sell it to local markets. His love for seafood led him to open a seafood wholesaling business by the time he was 21 years old. Within a few years, Wayne's love of seafood and talent for cooking led him into the catering business and eventually restaurant ownership.
As owner of both Little Village Restaurants, Wayne has a unique understanding of the business and what it takes to be successful. When the space for Le Creole became available, Wayne knew he wanted to go back to his roots in the seafood business. He wanted to offer a place where customers could enjoy seafood fresh from the Gulf of Mexico, and to create an environment that represented old New Orleans at its best. With the help of his wife, Luci, and a high school friend and local attorney, Dana Brown, the vision has become reality.
Ryan Andre, our Executive Chef, spent years studying the art of creole cuisine and comes to Le Creole from Commander's Palace in New Orleans. He brings his expertise to every dish served, and his commitment to excellence is displayed in the beautiful presentation of his food.
